Cardamon Chicken

Ingredients:
Whole chicken ( 1.25kg)
A:To be blended
11 pods cardamom
30gm ginger
25gm garlic
15gm dried chilli ( soaked)
10gm turmeric
3 star anise

B: 50gm big onion ( finely chopped )
2 cm cinnamon stick
2 cloves
1 tbsp oil

C: ½ cup water
½ cup yoghurt
½ tsp sugar
1 tsp salt

Method
1. Marinate chicken with blended ingredients A overnight.
2. CONVENTIONAL WAY: Deep fry chicken for 5 minutes.
3. Split chicken at breast, spread open and place in 2.5 litre oval dish.
4. Fry ingredients B in a 22cm casserole on Power High for 4 minutes.(without cover)
5. Stir in ingredients C and pour mixture over chicken.
6. over with plastic wrap and cook on Power Medium-High for 15 minutes.
7. Standing time:15 minutes with foil wrap.

Chicken Curry

Ingredients

550gm chicken pieces
½ cup coconut milk ( thicky)
½ cup water
1 tsp salt
¼ cup tamarind juice
1 stalk curry leaves

A:3cm cinnamon stick
30gm lemon grass (crushed)

½ tbsp curry powder
½ tbsp chilli powder

90gm shallots }
20gm garlic } blended with oil
8gm ginger }

Method
1. Combine ingredients A and fry in 22 cm casserole on Power High for 7 minutes.
2. Add in water , salt and chicken pieces.
3. Cover and cook on Power High for 5 minutes.
4. Stir in coconut milk and cook on Power High for 2 Minutes (without cover )
5. No standing time.

Black Bean Chicken

Ingredients:
500gm chicken pieces
1 ½ tsp cornflour / ½ tbsp water ( mixture)
spring onion for garnishing
A: 1 tbsp salted black beans
1tsp chopped garlic
2 tbsp oil

B: 1 tsp oyster
1tsp sugar
1 tsp sesame oil
¼ cup water

Method
1. Combine ingredients A and fry in 22cm casserole on Power High for 2 ½ minutes ( without cover)
2. Add in ingredients B, chicken pieces and cornflour mixture.
3. Cover and cook on Power High for 7 minutes, stir occasionally.
4. Standing times:8 minutes

Soya Sauce Chicken

Ingredients:
550gm Chicken, cut into bite size pieces
Marinade:
A:2 tbsp soya sauce
2 tbsp honey
½ tbsp oyster sauce
2 tsp minced ginger
1 tsp sesame oil
¼ tsp dark soya sauce
1tbsp oil

B: ¼ cup water
1 tbsp cornflour
salt & pepper to taste

Garnishing
1 stalk spring onions, diced
1 stalk coriander leaves, diced
1 red chilli, cut into strips

Method
1. Marinate chicken with A overnight or at least 2 hours in the fridge.
2. Preheat browning dish under Power High for 5 minutes.
3. Add oil and marinated chicken onto browning dish.
4. Stir in B, mix well and cook chicken on Power High for 8-10 minutes or until chicken is done.Season to taste.
5. Garnish with garnishings.Serve hot with rice.

Assam Cuttle-Fish

Ingredients

550gm cuttle-fish ( cut to 5cm squares )
150gm tomato ( cot to wedges )
50gm tamarind pulp
½ cup water
¼ tsp salt
½ tsp sugar
15gm mint leaves
(1)(to be blended with 1/3 cup oil)
100gm shallots
15gm garlic
15gm lemon grass
15 gm turmeric
15gm shrimp paste (belacan)
8gm dried chilli (soaked)

Method
1. Fry blended ingredients (1) in 22cm casserole,stirring occasionally, on power High for 5 minutes (without cover).
2. Stir in cuttle-fish , tamarind mixture, tomato, salt and sugar.
3. Cover and cook on Power High for 5 minutes.
4. No standing time.
5. Garnish with mint leaves and serve.

Curry Fish

Ingredients
500gm fish ( black pomfret cleaned & cut to 5 pieces )
200gm tomato (cut to wedges )
1 cup water
½ Tbsp tamarind juice
1 tsp salt

(1):65gm big onion 9 (sliced)
26gm ginger/garlic (chopped)
4 Tbsp oil
1 sprig curry leaves
1 ½ Tbsp chilli powder
2 pip cardamom }
2 cloves }
¼ tsp frungreek }finely ground
2 tsp coriander seeds }

Method
1. Combine ingredients (1) and fry in 22cm casserole on Power high for 7 minutes (without cover )
2. Add in water, tamarind juice, salt fish slices and tomato.
3. Cover and cook on Power High for 5 minutes 30 seconds.
4. No standing time.

East African Braised Chicken

Made dinner for my mom and dad tonight... This easy to make chicken "stew" is incredibly delicious, full of spicy aromatic flavors. The cool tang of the yogurt on top sets it off perfectly. Just scoop it up with some pita bread and you're good to go!

Ingredients:

2 lb chicken breast (cut up into 1-inch chunks)
1/2 tsp salt
1/2 tsp black pepper
1 Tbsp olive oil
3 cup sliced onion
1 cup sliced red pepper (or a mix of green, red and yellow)
1 Tbsp chopped peeled fresh ginger (or 1 tsp of ground ginger)
1 tsp curry powder
1/2 tsp ground cinnamon
1/2 tsp ground cardamon
1/4 tsp nutmeg
1/4 tsp ground red pepper
2 large garlic clove, thinly sliced
1/2 cup low-sodium chicken broth
1/2 cup dry white wine
1/2 cup orange juice
3 Tbsp chopped pitted dates
3 Tbsp golden raisins

Directions:

Preheat oven to 350°F

Sprinkle chicken with salt and black pepper. Heat oil in a Dutch oven over medium-high heat. Add chicken; cook 4 minutes on each side or until golden brown. Remove the chicken from pan.

Add the onion and red bell pepper to pan; reduce heat to medium-low, and cook for 10 minutes, stirring frequently. (Scrape up all the chicken bits stuck to the bottom to add lots of flavor!)

Add the ginger and next 5 ingredients (ginger through garlic); cook for 1 minute. Stir in chicken, broth, wine and the remaining ingredients, and bring to a boil.

Cover and bake at 350°F for 1 hour (or cover and simmer on stove top for 1 hour).

While cruising at 36,000 feet, the airplane shuddered, and a passenger looked out the window."Oh no!" he screamed, "One of the engines just blew up!" Other passengers left their seats and came running over; suddenly the aircraft was rocked by a second blast as yet another engine exploded on the other side. The passengers were in a panic now, and even the stewardesses couldn't maintain order. Just then, standing tall and smiling confidently, the pilot strode from the cockpit and assured everyone that there was nothing to worry about. His words and his demeanor seemed made most of the passengers feel better, and they sat down as the pilot calmly walked to the door of the aircraft. There, he grabbed several packages from under the seats and began handing them to the flight attendants. Each crew member attached the package to their backs. "Say," spoke up an alert passenger, "Aren't those parachutes?" The pilot confirmed that they were.The passenger went on, "But I thought you said there was nothing to worry about?" "There isn't," replied the pilot as a third engine exploded. "We're going to get help."
